The 2015 growing season started early in Napa Valley. As California entered its fourth year of drought, we were fortunate to receive spring rains sufficient to fill our reservoir and saturate the soil. Consistent sun and warmth throughout the growing season led to an early crop of high-quality grapes.
The Cabernet Sauvignon and Sagrantino in this blend were harvested and fermented separately. After a brief cold soak, each lot fermented in 10-14 days. The wine was gently pressed off the skin to age in French oak barrels, 50% new barrels for the Cabernet and 25% new for the Sagrantino.
The 2015 John’s Promise incorporates Sagrantino from our estate vineyard, which lends a deep color as well as intriguingly compelling aromas of pomegranite, blackberry, exotic spice, cedar and lavendar. The wine is deep and structured, with layers upon layers of flavor that gradually reveal themselves. Rich, balanced, and silky smooth, the big but approachable tannins support and complement the flavor dynamics and lead to a long and complex finish. Enjoy now or out of your cellar for the next 10 years.
This wine will pair well with savory, well seasoned food, such as mixed vegetables off the grill such as porcini, eggplant, red onion and squash, perhaps served alongside lamb or steak medallions. Try with an unusual Italian sauce such as cacio e pepe (cheese and pepper), Genovese sauce (onions, carrots and celery), or salsa verde (parsley, capers, garlic, anchovies, onions and olive oil).
