2012 John's Promise (1.5L)

We celebrate our 20th harvest with this inaugural release of John's Promise. An estate-grown, Cabernet Sauvignon-based blend, this wine embodies that promise. It’s densely structured with blackberry fruit flavors complemented by hints of mocha and clove that linger on the finish.

The three varieties in the John’s Promise blend were harvested and fermented separately. After a brief cold soak each lot fermented in 10-14 days. The wine was gently pressed off the skin to age in a mix of French and Hungarian oak barrels, with 50% new barrels used for the Cabernet Sauvignon and the Syrah.
In the winery we treat our Zinfandel as gently as our Sangiovese. We ferment in open top tanks and gently punch down twice each day. When the fermentation is complete we mature the wine in mostly neutral French and Hungarian oak barrels, as well as a few, larger puncheons.
This is a wine of elegance and grace. The Aglianico and Syrah contribute blueberry and raspberry aromas to the blackberry and blackcurrant notes from the Cabernet Sauvignon. The influence of the new barrels is subtle and well integrated, adding a bit of structure to the mid-palate and lengthening the finish. The lively interplay of flavors will continue to grow more complex with time in the bottle.
Filet mignon, Saltimbocca, bistecca fiorentina and Portobello. This wine compliments any dish which honors the inherent flavors within finer cuts of red meats.
