2016 Rosato di Sangiovese
Despite the ongoing statewide drought, Napa Valley received close to average rainfall in 2015-16. More than 12” fell in March, 2016, ensuring that the vines had ample water as they emerged from dormancy. The growing season was considerably cooler than in the previous two vintages, allowing us to harvest beautifully ripened grapes at the end of a long growing season.
We pick the Sangiovese for our Rosato about two weeks before we pick from the same vineyard block for our red wine, capturing brighter fruit flavors and a lively character. We gently destemmed and crushed the berries before sending to the press, where a long, gentle pressing cycle extracted beautiful juice. We fermented the wine slowly at cool temperatures to maintain the brilliant aromatics..
This coral pink wine entices with aromas of strawberry, red and golden raspberries, and a hint of pink grapefruit. The palate is creamy and lively, juicy and refreshing with a lipsmacking, lingering finish.
Enjoy with a watermelon, basil and feta salad, pasta with olive oil, fresh cracked black pepper, pecorino Romano and chili flake, grilled salmon with lemon, pizza with fig, frutti di mare or shrimp alla diavola.
