*New Release 12/17/2012Hand-harvested fruit from this land was gently destemmed into small open-topped tanks for cold-soaking and fermentation. The total maceration time in 2009 was 31 days. The new wine was then drained and pressed and placed in a combination of new American Oak and once-used French Oak barrels for aging. Racked twice during its 15 months in the barrel, the wine was bottled without fining or filtration to retain the maximum flavor and complexity.
On first pouring, is brilliant medium red, with distinctive terroir and velvety texture. Spicy cherry and bright blackberry aromas that are complemented by clove and allspice tones that carry through to the palate. We suggest pairing ribe-eye. steaks, lamb shank, blue cheese, and Belgian chocolates. The well-structured 2009 vintage will age well for the next five to seven years.
