THE VINTAGE2012 was a glorious growing season throughout the Napa Valley. An early budbreak and moderate temperatures led to a long, slow ripening period, allowing outstanding flavors to develop at relatively low Brix. We harvested at ideal ripeness grapes with ideal color and mature, silky tannins. WINEMAKINGWe produce our 100% Sangiovese from a variety of varietal selections, enhancing the complexity of the finished wine. In the winery we handle the fruit gently, destemming without crushing the berries. We adjust our cap management techniques—punchdowns and pumpovers—to get the desired structure and color without overextraction.TASTING NOTESThis wine displays a beautiful garnet color with classic varietal aromas of Bing cherry, a hint of strawberry and fruit leather. On the palate the wine reveals flavors of pie crust, blackberry and vanilla. Vibrant acidity is supported by firm but restrained tannins. There is a touch of spice on the long finish. Drinkable now but has the density to last a decade or more.PAIRINGS Our 2012 Sangiovese will pair wonderfully with traditional fare such as grilled steak or Portobello mushrooms. We also suggest enjoying it with a grilled cheese and mushroom sandwich. Add cambozola cheese and sautéed mushrooms to your favorite bread. Use porcini or shiitake mushrooms if you can find them. Portobello and crimini will work too. Cook on a stovetop or in a Panini press and enjoy!
