The 2019 growing season was a roller coaster that kept us on our toes, but resulted in beautiful wines. Spring precipitation persisted through bloom and berry set, but the weather had little impact on our yields. As summer progressed, our typical heat spikes failed to appear, allowing berry flavors to develop slowly, and leading to one of our longest harvests on record. We picked at optimal ripeness and are thrilled with our young wines.
Our Cabernet Sauvignon is 100% Clone 4, a selection famous for the grace and power that it brings to the finished wine. In the winery we handle the fruit gently, destemming without crushing the berries. We adjust our cap management techniques—punchdowns and pumpovers—to get the desired structure and color without overextraction.
With its inviting deep garnet hue and captivating aromas, this gorgeous Cabernet is difficult to resist. Concentrated blackberry and black raspberry notes are supported by well integrated oak and hints of vanilla, espresso, and cocoa powder. On the palate the wine is deceptively supple, allowing unhindered mingling of flavors that unite in a complex, evolving and lengthy finish. This wine has the structure to further develop in your cellar for 10-15 years.
Look for foods with bold flavors to match this wine's intensity, such as a peppercorn-crusted steak, rosemary-scented lamb kabobs, or a Caprese bowl with roasted zucchini and almonds with thyme and oregano.
